The Story of Okolehao – In Hawaii, alcohol was first made by English sailors as a beer from fermented roots of the ti plant in the 1780’s. In 1790 an escaped Australian convict brought distillation to Hawaii, using the ti root beer to produce a highly alcoholic  spirit which became Hawaii’s only indigenous distilled spirit, Okolehao.

Okolehao Transliteration – The name is from the iron try pots that were brought ashore from sailing ships and converted into stills, and literally meant “iron butt”, from Hawaiian ʻōkole (butt) + hao (iron).

Oahu’s Oldest Distillery Island Distillers was born from the idea that excellent spirits could be made right here in Hawaii from our abundant natural resources and perfect climate.

Seated directly at the base of the historical Koko Crater, surrounded by flourishing banana trees and mature sugar cane fields you’ll find Island Distillers. The location perfectly captures the stylistic distilling approach of embracing traditional  tropical flavors, found throughout on the Hawaiian Islands.

Distillation Notes – Hawaiians discovered that if the ti root is baked, a sweet liquid migrates to the surface of the root. Chemically, the heat changes the starch in the root to a fermentable sugar. The baked root is then soaked in water which dissolves the sugar, and fermentation begins.

Tasting Notes – As a spirit unique to Hawaii, it presents a flavor of its own. Experience Hawaiian tradition; you’ll find flavors of earthy and vegetal notes, hints of banana with subtle pineapple.

    We love this unique native Hawaiian spirit. It goes great in all tropical cocktails. We brought home several bottles from Oahu and hope to order more for the holidays.
